Long Canyon Trail is a great singletrack trail that passes by Mescal Mountain on its way to the Red Rock-Secret Mountain Wilderness. Once the path enters the wilderness, no bikes are allowed on the trail, but there are plenty of other trails that connect to this one before you ever get to the wilderness boundary.
