The real Apulian mozzarella must be tasted as soon as it is made, warm and fragrant and at Masseria Madonna dell'Arco they know it well since they produce it every day with extreme skill. It is a matter of a few seconds and the piece of mozzarella is removed from the water at 90 ° to be braided

An ancient 17th-century farmhouse located in the heart of the Itria Valley between the municipalities of Martina Franca, Locorotondo, and Cisternino. In addition to vineyards and olive groves, there are vast pastures and centuries-old oak and ash woods where horses, donkeys, cows, pigs, and sheep roam freely. The farm offers up-close tours of the farms and the opportunity to follow every stage of production, right up to the final tasting of excellent traditional products.
