The soil in their vineyards is considered their most important asset, and their primary task is to protect it and provide the vines with a conducive environment. With 2.5 hectares of vineyards on gravelly quartz phyllite at altitudes of 550 to 700 meters, they work carefully to prepare the vines for changes and thus produce authentic wines. The approach in the cellar is minimalist, without unnecessary interventions – the focus is on juicy, smooth, and easy-to-drink wines that invite convivial and enjoyable enjoyment. Michael Oberpertinger, a trained chef who runs the Spitalerhof winery in Klausen, follows a minimalist philosophy in wine production: "As little as possible, as much as necessary." This approach preserves the unique character of the wines and is also reflected in the natural cultivation of the vineyards. The winery specializes in Eisacktal white wines, with Grüner Veltliner playing a particularly important role. The Grüner Veltliner Muga is a winery specialty, where the grapes are harvested in November when they are partially dried and affected by botrytis. The wine is fermented in wooden barrels and aged on the lees, which gives it its unique character. In addition to Grüner Veltliner, the Spitalerhof also grows Sauvignon, Sylvaner, Gewürztraminer, Pinot Noir, and Lagrein. You can enjoy refreshments at the Muga restaurant. The Eisacktal Winery, South Tyrol's youngest cooperative winery, clearly pursues the goal of producing mineral, fruity, and elegant mountain wines with their own distinctive character. It is the smallest and northernmost cooperative winery in Italy and consists of 135 members. The monastery winery in Neustift, founded in 1142, is one of the oldest active wineries in the world and one of the most important in the Eisack Valley. It is particularly known for its white wines, which account for around 70 percent of production. The main varieties include Sylvaner, Müller Thurgau, Kerner, and Riesling, which thrive in the vineyards of the Brixen valley basin at altitudes of up to 900 meters. The monastery winery places great emphasis on sustainable vineyard management and operates in a CO2-neutral manner. In addition to white wines, the winery also produces red wines. These grapes come from Bolzano and Cornaiano, as the climate in Brixen would be too harsh for red varieties. The winery's most famous wine line is the Praepositus series, named after the abbot of the monastery, as a tribute to the winery's leader.
